The #6, Rajas, is an old family recipe which delivers the pungent richness of traditional ingredients blended with a subtle skill that is taken for granted. It will tickle your throat so have an icy Jamaica close by.

Thank you, TE, for that comment. The Rajas is one of my favorites. It doesn't photograph so well. But the blend of cheese, pepper and onions is outstanding namely because it is sitting on the best corn tortilla I've ever had the pleasure of wrapping my lips around.
